This spring we realized that our youngest daughter, Emily Rose, needed to be on a gluten-free diet.  Within just a few days of being gluten-free she was feeling better than she had for a long, long time. After a couple of weeks Breezy and I joined in on the diet and we too are seeing significant improvement in our health. My husband now eats mostly gluten-free except for our wonderful wholewheat bread and he feels better too.

What I have seen the most change in is our improved energy level. And for that I say Yippee!!

Since I knew very little about gluten and gluten-free foods, I began reading every book that I could get my hands on about the subject. I searched the internet for any gluten-free recipes and information I could find. What I found was simply amazing. There are many people who have already gone down this path and are sharing what they have learned through books and the internet. I am so grateful!

So for the past few months I have been either researching about gluten or in the kitchen trying out new recipes and figuring out how to cook gluten-free.  I have had some flops and some successes.  I hope to share on my blog my successes and warn you of my flops, so that in turn I can hopefully help someone else on this journey, just like so many others have helped me.
